The Boston Butt is India’s 1st Smokery, Charcuterie ,Bar and Cafe. Our food is marinated for approximately 24-36 hours which helps it retain the juices and add to the flavour. Our curing process varies from 7 days to 120 days. We are influenced by Texan and Louisiana American Smokeries which are the best in the world. Our head chef had visited USA specially for training and learning the intricacies of the complicated and thorough method of cooking at various Smokeries and Charcuteries.
We slow cook the food over 12-15 hours at the same temperature which is constantly monitored by a team of well trained chefs. We have imported customised grilles/smokers from USA which enables us to cook low and slow. Our team of chefs monitor the special thermometer probes which help maintain the same temperature during the entire cooking process which helps the food achieve the savoury and succulent taste.
We also specialise in pre-prohibition era and signature cocktails which are made with the help of special ingredients which are flown in from USA.
